Matured in 90% new, 10% used French (67%) and American (33%) hogsheads for 18 months prior to blending and bottling.
 
Deep crimson in colour with a purple hue. Powerful, ripe aromas of blackberry and plum with complexing hints of star anise, ferns, eucalypt and dark chocolate. The palate is an intense and concentrated blend of sweet, juicy plum pudding fruit and structured ripe tannin. With mouthfilling power, seamless texture and lingering finish the wine displays the hallmark characters of the Mount Edelstone vineyard in one of its greatest years.

The 2005 Mount Edelstone is a 100% Shiraz cuvee sourced from a vineyard planted in 1912. Yields are a meager 0.3 to 0.5 tons of fruit per acre. In combination with a near ideal growing season, this has resulted in a great edition of Mount Edelstone, one of South Australia’s iconic wines. Purple-colored, the nose gives up notes of mocha, chocolate, smoked meat, pepper, leather, blueberry, and blackberry. Elegant, already complex, layered, and thoroughly satisfying, this superb Shiraz has enough baby fat to be enjoyed now but will amply reward 5-7 years of cellaring. It will drink beautifully through 2025.

在法國橡木桶裡發酵10個月,亮眼的金黃色,帶有白桃、杏仁香氣,酒質飽滿,餘韻悠長的果香,柔軟細緻,風味絕佳。

These hand picked grapes were whole-bunch pressed directly to barrels, and the juice handled with passive oxidation. The wine was fermented in mostly mature French oak barriques, by a population of naturally occurring and differing species of yeast indigenous to the environment of the vineyard. In these 'wild' or 'feral' ferments each yeast played a small and subtly different part in the development of the wine, creating layers of richness, complexity fine textures and flavours. After fermentation the wine was aged on lees with regular batonnage for ten months to further heighten the palate weight and increase the complexity and flavour generosity. At blending only the finest barrels were chosen.

The season created a wine with both finesse and opulence, with layers of complexity and lusciousness. On the nose the aroma is intense with white peaches, apricots and ginger. The palate is lifted with ginger spice, layered mineral texture and complex apricots along with white stone fruit flavours. The trademark Viognier lusciousness of the palate is clearly evident in this wine which is unctuous and complex while at the same time showing restraint that should ensure good cellaring for at least 3-4 years.

The Virgilus Viognier was barrel-fermented using indigenous yeasts and aged in seasoned French oak for 10 months. Light gold in color, it exhibits an attractive nose of white peach, apricot, orange zest, and ginger. This leads to a full-bodied wine with a smooth, creamy texture, excellent depth and concentration, and a lengthy, fruit-filled finish. Drink this tasty effort over the next several years.
