使用90歲以上老藤Shiraz，有著優美如天鵝絨般柔軟的單寧，香氣環繞著優雅的紅櫻桃、石榴與薄荷香氣。酒體相當均衡和諧，結尾帶著些許的礦石香氣。

Matured in 90% new, 10% used French (67%) and American (33%) hogsheads for 18 months prior to blending and bottling.

Deep crimson in colour with a purple hue. Powerful, ripe aromas of blackberry and plum with complexing hints of star anise, ferns, eucalypt and dark chocolate. The palate is an intense and concentrated blend of sweet, juicy plum pudding fruit and structured ripe tannin. With mouthfilling power, seamless texture and lingering finish the wine displays the hallmark characters of the Mount Edelstone vineyard in one of its greatest years.

The 2005 Mount Edelstone is a 100% Shiraz cuvee sourced from a vineyard planted in 1912. Yields are a meager 0.3 to 0.5 tons of fruit per acre. In combination with a near ideal growing season, this has resulted in a great edition of Mount Edelstone, one of South Australia’s iconic wines. Purple-colored, the nose gives up notes of mocha, chocolate, smoked meat, pepper, leather, blueberry, and blackberry. Elegant, already complex, layered, and thoroughly satisfying, this superb Shiraz has enough baby fat to be enjoyed now but will amply reward 5-7 years of cellaring. It will drink beautifully through 2025.

其實，澳洲並不是每個地方都這麼炎熱，就如同Eden Valley，有著高海拔涼爽氣候，在一群高酒精葡萄酒環伺的地區中，保有自己的風範，這種涼爽的氣候，正適合細緻葡萄生長，特別是白葡萄品種。

Yalumba酒廠建立者是英國籍的山謬史密斯Smauel Smith先生，他於1849在澳洲落地生根，在他跟兒子種下第一棵葡萄樹的那一刻起，Yalumba的傳奇就延續了150年，Yalumba是澳洲當地土話『附近的土地』之意，在熱愛這塊土地的同時，酒廠也進行多次的發展與創新，建立起了穩定而且高品質的名聲，澳洲葡萄酒大師James Halliday給予Yalumba四顆半星的肯定（最高為五顆星）。

Smith先生，是第一位把北隆河Viognier維歐尼耶白葡萄移植到澳洲，成功種植的先驅，對這個品種在澳洲生長情形的掌握度，無人能出其右，Viognier維歐尼耶是非常不容易種植的品種，嬌弱多病而且易染黴菌，與柔弱的黑皮諾Pinot Noir一樣，能夠成功種植必須花費許多苦心，而Viognier有一般常見白葡萄品種所沒有的迷人香氣，類似鳳梨心與檸檬，熱帶水果，也有許多花香與香料氣息，這樣的特色特別適合搭配中式餐點，甜鹹香辣的醬汁一概全搭，這可是五號多次嘗試的結果。

這支酒是Eden Valley品質非常優異的Viognier，美國大酒商K&L認為，他的品質非常像是Viognier的發源地，也就是法國北隆河的Condrieu產區，不過比較可以早喝且容易親近，有更多迷人的花果香氣（exceptional Viognier from Eden Valley...the 2008 Eden Valley Viognier is like Condrieu.），WS也給予92的高度評價，並認為是支頗好的Smart Buy，是2009年WS百大的第39名，柔順，乾淨的結構，檸檬，梨子，鳳梨，與香料氣息，尾韻極長且新鮮活潑。
