Matured in 90% new, 10% used French (67%) and American (33%) hogsheads for 18 months prior to blending and bottling.
 
Deep crimson in colour with a purple hue. Powerful, ripe aromas of blackberry and plum with complexing hints of star anise, ferns, eucalypt and dark chocolate. The palate is an intense and concentrated blend of sweet, juicy plum pudding fruit and structured ripe tannin. With mouthfilling power, seamless texture and lingering finish the wine displays the hallmark characters of the Mount Edelstone vineyard in one of its greatest years.

The 2005 Mount Edelstone is a 100% Shiraz cuvee sourced from a vineyard planted in 1912. Yields are a meager 0.3 to 0.5 tons of fruit per acre. In combination with a near ideal growing season, this has resulted in a great edition of Mount Edelstone, one of South Australia’s iconic wines. Purple-colored, the nose gives up notes of mocha, chocolate, smoked meat, pepper, leather, blueberry, and blackberry. Elegant, already complex, layered, and thoroughly satisfying, this superb Shiraz has enough baby fat to be enjoyed now but will amply reward 5-7 years of cellaring. It will drink beautifully through 2025.

酒色呈現極深的紫色,令人印象深刻的豐厚度,有著木炭、刺槐、黑莓及香料香氣。適飲期可長達15年或更久。

 

Grapes were hand picked and crushed to 8 tonne open top stainless steel fermenters. The natural or 'wild' yeasts present on the grape skins were allowed to initiate the sugar fermentation. Cultured winery yeasts were then added to complete this fermentation. Fermentation and cap/skin management was controlled by the Yalumba designed cap plunger. The result is a wine with excellent depth of colour, richness and complexity. The grapes for ‘The Signature’ are sourced from vineyards within the Eden Valley and Barossa Valley regions. The vines are all mature with yields generally between 2 and 5 tonnes per hectare. Soil types vary from red brown earth over red clay, sandy loam over clay to sandy soils.

 

Lifted redcurrant, warm exotic fruits and dark chocolate combine with subtle eucalypt flavours. The wine has a generous yet stylish palate, showing dark plums, cassis, chocolate and long fine tannins giving a wine structured for ageing. The wine will reward with medium to long term cellaring.

The 2004 The Signature is composed of 54% Cabernet Sauvignon and 46% Shiraz. It was aged for 22 months in French, Hungarian, and American oak, 50% new. Opaque purple-colored, it presents a perfume of pain grille, earth, tar, vanilla, pepper, blueberry, and blackberry. Opulent on the palate, it has gobs of ripe fruit, complexity, superb balance, and exceptional length. It will improve over the next 8-10 years in the cellar and drink well through 2030.
