Chapoutier在1808年就已經是法國隆河谷地的響亮名號。1879年Polydor Chapoutier開始購買葡萄樹，從此；Chapoutier一路從葡萄園莊主、葡萄栽種專家、釀酒人，甚至後來搖身一變成為傑出的葡萄酒商。相傳七代，四十多歲的Michel Chapoutier，對老祖宗流傳下來那一大片深植於歷史與傳統裡的優良葡萄園地，同樣充滿無限的熱忱。在Michel的領導之下，Chapoutier在隆河谷地有非常顯赫的地位，是家頂尖的酒商；擁有許多當地最優良的葡萄園地，包括在Hermitage地區三個獨立的葡萄園地，Le Pavillon、Le Meal、L'Ermite。而就像隆河谷地境內許多中大規模的葡萄酒商，除了自家擁有的獨立莊園外，Chapoutier也會向其他的葡萄農購買葡萄果實原料，釀製的酒款代表了隆河谷地多樣的產區特色，既豐富又齊全。另外，他們的葡萄酒生意也跨足其他法國南部地區，甚至遠在澳洲南部也設置一間酒莊。

 

因為熱愛葡萄樹、葡萄酒，並意識到尊敬大地以及它週遭的自然環境與歷史人文傳統的重要性，90年代中期，Maison M. Chapoutier選擇用自然動力法種植葡萄，並且將『點字』運用在所有的M. Chapoutier酒標標示上。

 

Hermitage是隆河北部非常出名的葡萄酒產區，橫跨Tain l'Hermitage，Crozes-Hermitage及Larnage，最早種植於十世紀時期，據說路易十四時期Sterimberg騎士（Chevalier de Sterimberg）在Tain l'Hermitage山丘上建造了一間小教堂，並在週邊的園地從事葡萄耕種，釀製的酒廣受歡迎，他隱居的地方，法文稱為 『Ermitage』，也就成為Hermitage的由來。

 

座落 Tain-l'Hermitage丘上約4公頃的Le Pavillon葡萄園，葡萄樹齡平均為60年，土壤混合了沙、淤泥以及黏土，釀製出來的酒可以說是『Ermitage中最複雜多變』的，年輕時色澤非常深，一開始呈現煙燻燒烤味，接著才出現如覆盆子、黑醋栗、胡桃以及香草等氣味，入口後，濃郁複雜的酒體，多層次的酒質架構平衡良好，單寧細緻如絲，悠長的醇香尾韻、甘草以及菸草的氣味是這款酒典型的特徵。

 

採收去梗後的果實被放置在開放木槽發酵，持續約3-4星期溫控發酵，每天還會經過1-2次攪桶，最後會經過50%舊橡木桶熟成15-18個月，不經過濾即裝瓶，深紫色、有刺槐花，似鉛筆粉末的香氣，還有煙熏黑醋栗香。強勁飽滿的酒體，複雜多變，充滿了黑醋栗、李子、咖啡還有礦物質的味道，驚人的單寧，餘韻縈繞於口良久。2011年份又再度獲得Robert Parker本人給予100分的極致評價！稱讚『飽滿又極富深度』、『單寧圓滑細膩』，WS給了96分且說『此年份中質地相當緊密的一款』，英國葡萄酒大師Jancis Robinson也給18.5分評鑑，且說『相當典型的Hermitage』且『非常肉感可口』。

Even better and a prodigious effort that hits all my sweet spots, the 2011 Ermitage Le Pavillon comes from one of the top terroirs on Hermitage hill, the granite soils of the Les Bessards lieu-dit. Spectacularly perfumed, with raspberry, blackberry, licorice, toasted spices and assorted floral nuances, this full-bodied effort has massive depth and richness, no hard edges and masses of finely polished tannin that emerge on and frame the finish. It will be approachable at an earlier age than either the 2009 or 2010, yet should nevertheless have 2-3 decades of ultimate longevity.

 

Wine Spectator：96 points

Densely packed, with dark plum, currant paste and macerated fig fruit, offset by a zesty edge. Briary tannins stride along with the copious fruit, revealing lots of spice and bramble notes on the finish. Very dense for the vintage. Best from 2016 through 2030.

 

Jancis Robinson：18.5/20 points

Dark, shiny crimson. Very meaty, savoury and the most obviously stereotypically Hermitage. Polished tannins but they are there in abundance. Very notable acidity and bone dry fruit. Wait ages before opening this. Lots of fresh, characterful fruit. Very serious indeed - for enormous eventual pleasure.
